CAA Wine Industry Network's Holiday Pairing Ideas

Ron Prashker ’04BUS, an owner of Salcheto Winery, suggests the Italian holiday classic of Bolito Misto and Salco or Vecchie Viti del Salco, both top Cru selections of their top Vino Nobile vineyards.

“We think an important aged red wine, with adequate acid and tannin along with nice fruit and spices in the right balance is the best pairing for any food and any occasion, but it becomes the ultimate proof that it is really a celebration when it pairs with a lot of rich and abundant food. If you happen to eat some of the broth from the ham, try to put a half glass of the wine into it.”

Lawrence Slaughter ’85CC of Château de Mille proposes Saint Lucide 2020 with stuffing (cooked mix of seasoned beef/lamb as well as shredded carrots/apples/celery and a few walnuts).
